Catskill Brussels sprouts, introduced in 1941 by Arthur White of Arkport, NY, have deep roots in the Catskill Mountains of New York. They gained recognition for their adaptability to colder climates, playing a pivotal role in popularizing Brussels sprouts across the United States. Developed to thrive in the cold Catskills climate, these sprouts are compact and round, measuring 1-1.5 inches in diameter, renowned for their exquisite flavor and tenderness. Brussels Sprouts are best planted as transplants. For fall harvest, start seed indoors 4 to 6 weeks before transplanting the garden. Optimum soil temperature for seed germination is 70-80 degrees. Place them in the garden 2 to 4 weeks before average last frost. As the sprouts on the main stem begin to enlarge, remove the lower leaves of the plant. Harvest sprouts as they become solid and about 1 to 2 inches in diameter. The lowest sprouts will mature first.
