Beets
Beets bring two harvests from one row: sweet, earthy roots below and tender greens above. Choose round, cylindrical, golden, white, striped, and deep-red varieties for fresh eating, roasting, pickling, storage, and colorful garden meals.
Direct sow in cool soil, thin early, and keep moisture even so roots size up smoothly. Young leaves can be harvested sparingly while the roots develop, and succession sowings help keep both greens and roots coming through spring and fall.
