Amaranth
Amaranth combines edible leaves, nutritious grain, dramatic seed heads, and strong ornamental presence in one heat-loving crop. Choose leaf types for tender greens, grain varieties for harvest, or cascading and upright forms for bouquets and garden structure.
Direct sow after the soil has warmed, give plants full sun and room to mature, and harvest according to use. Young leaves are tender for cooking, while grain heads should dry before threshing.
