Common chives (Allium schoenoprasum) pop up early with hollow, oniony leaves ready for omelets, potatoes, and vinaigrettes. By late spring they drum with lilac pom-pom blooms that feed bees and make edible garnishes. Perennial and cold hardy, chives prefer sun and decent soil but tolerate neglect.
Divide clumps every few years to refresh vigor. Snip leaves frequently to keep them tender; let a few flower heads set seed if you want volunteers. A small patch by the kitchen door means you’ll never need grocery-store clamshells again—fresh flavor is a quick step outside.
