Copenhagen Market is a 1909 Danish heirloom bred for the city’s market gardeners—compact, round heads with sweet, crunchy leaves that shine in slaws, kraut, and roasted wedges. Early, uniform, and tidy in the bed, it fits small gardens and harvest schedules alike. Gardeners have kept it on their lists for over a century for good reason: dependable heading, clean flavor, and a workload that’s easy to manage from transplant to table. Cabbage brings vitamin C and gut-friendly fiber, and this variety delivers it with classic, no-nonsense appeal.
Start seed indoors 4-6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 50-85 degrees. Transplant to the garden 2 to 4 weeks before your average last frost. If direct seeding, sow seeds 3 to 5 weeks prior to average last frost or as soon as the soil can be worked. For fall harvest, plant transplants 7-9 weeks before average first frost date.
