Garlic chives (Allium tuberosum) form flat, strap‑like leaves with a mellow garlic flavor—perfect for dumplings, eggs, and compound butters. Late summer brings starry white umbels that feed pollinators and reseed freely if you don’t deadhead. Rich in vitamins A and C, garlic chives are perennial and cold hardy, returning early each spring. Plant in sun and reasonably fertile soil; divide clumps every few years to keep them vigorous. Snip leaves often for the kitchen and you’ll never miss the store-bought bunches. A small patch gives you fresh, garlicky greens nearly all season.
