Rosa Bianca is a Sicilian heirloom eggplant with lavender‑blushed, white fruits that cook to creamy, almost sweet flesh—perfect for roasting, stuffing, or grilling. Thick skins resist bitterness, and the plants set well in heat with regular water. Eggplants bring fiber and nasunin, a potent antioxidant in purple skins. Start early indoors; they love warm soil and steady fertility. Harvest at glossy maturity before seeds harden. If grocery eggplant seems bland, Rosa Bianca reminds you why gardeners grow their own.

Start seed indoors 6-8 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 70-90 degrees. Transplant to the garden 2 to 3 weeks after your average last frost. Eggplants love it hot. They tend to grow best when daytime temperatures are 80-85 degrees. When plants are about 6" high, nip back the growing tip to encourage branching. Eggplants benefit from full sun, cold weather protection, black plastic mulch and possibly row covers.
