Green Wave mustard throws frilly, lime‑green leaves with a wasabi‑hot kick when raw and a mellowed, spinach‑like flavor when cooked. An All‑America Selections winner from 1957, it’s fast, cold tolerant, and productive, making it a shoulder‑season workhorse. Mustards bring glucosinolates—those sulfur compounds behind their bite—and plenty of vitamin C. Direct sow early or late, harvest baby or full size, and succession plant for a steady wave of greens. Stir‑fry, pickle, or toss into soups; it’s a versatile green for more than Southern pots of pork and mustard.

Plant seeds directly into the garden starting 4-6 weeks before average last frost date continuing until about that date. You can also start seeds indoors 5-7 weeks before transplanting. Optimum soil temperature for seed germination is 45-75 degrees. Mustard greens are a cool season crop so avoid letting it mature in hot weather. High temperatures slow plant growth and make the leaves tough and bitter. Grow it in the spring, then again in the fall. Succession plantings every at 2 weeks intervals will provide a steady supply.
