Italian Giant parsley lives up to its name with broad, flat leaves that pack real flavor—good for pesto, soups and broths, finishing pasta and grilled meats, herb butter, potato salad, piccata, and stuffing. An heirloom from Italy, it grows 18–20 inches tall and rebounds fast after cutting, so one patch can keep a kitchen supplied all season. Parsley is loaded with vitamins A, C, and K and has been used as a breath freshener and digestive helper for centuries. Give it rich soil, steady moisture, and regular harvesting to keep leaves tender. Let a few umbels bloom if you want beneficial insects and seed for next year, but keep most plants clipped for that lush, green punch.

Start seed indoors 6-8 weeks before transplanting into the garden. Seeds can be soaked in water overnight, then planted in containers. Optimum soil temperature for seed germination is 55-70 degrees. Transplant to the garden 1-2 weeks before your average last frost date. Or, plant seeds directly into the garden as soon as soil can be worked. Cuttings can be made throughout summer and into fall.
