Delicata is the little loaf-pan squash with big flavor—cream-colored fruits striped green, sized just right to split and roast into caramel-edged “boats.” The skin cooks tender and edible, so every slice brings sweet, nutty flesh plus a bit of toasty chew. Introduced by Peter Henderson & Co. in 1894, it nearly disappeared mid-century, then came roaring back as home gardeners—and modern disease-resistant selections—rediscovered how practical and delicious it is. Compact vines set early, personal-size fruits that roast in under an hour and shine stuffed, sliced for sheet-pan dinners, or tossed warm with brown butter, sage, maple, or chili and lime. Naturally rich in fiber and potassium with a modest dose of vitamin A.

Start seed indoors 3-4 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 65-85 degrees. Transplant to the garden 2 to 3 weeks after your average last frost. Or, plant seeds directly in the garden 1-2 weeks after average last frost date. Sow 3-5 seeds per hill, thinning to a final 2-3 plants per hill. Winter squash grow best in a warm site with full sun. Warm soil is essential to good seed germination and emergence. Using transplants can speed production.
