Kabocha (Japanese pumpkin) packs dense, low-moisture flesh with chestnut-like sweetness under deep green skin. Compact 3–5 lb fruits store for months after curing. Roast into caramel-edged wedges, batter for tempura, purée into velvety soups, or cube for curries; it also makes a standout gnocchi or ravioli filling. The thin rind softens in the oven and is often eaten. Naturally rich in beta-carotene and fiber, kabocha pairs beautifully with miso, ginger, soy, sesame, coconut milk, brown butter, or sage. Side by side, butternut reads mild and silky, while kabocha delivers deeper flavor, a sweeter impression, and a tighter, nutty crumb—luxuriously creamy when mashed.

Start seed indoors 3-4 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 65-85 degrees. Transplant to the garden 2 to 3 weeks after your average last frost. Or, plant seeds directly in the garden 1-2 weeks after average last frost date. Sow 3-5 seeds per hill, thinning to a final 2-3 plants per hill. Pumpkins grow best in a warm site with full sun. Warm soil is essential to good seed germination and emergence. Using transplants can speed production.
