Lacinato (Tuscan, Dinosaur) kale dates back to 18th‑century Italy—dark, savoyed leaves with a sweet, mineral depth that improves after frost. High in vitamins A, C, and K, it’s a nutrient powerhouse for soups, sautés, and kale chips. Plants are cold hardy and long‑bearing; harvest lower leaves and the plant keeps climbing. Sow spring and fall, feed lightly, and enjoy fresh greens deep into winter. This is the kale that turns skeptics into believers.

Plant seeds directly into the garden starting 4-6 weeks before average last frost date continuing until about that date. You can also start seeds indoors 5-7 weeks before transplanting. Optimum soil temperature for seed germination is 45-80 degrees. Kale is a cool season crop so avoid letting it mature in hot weather. High temperatures slow plant growth and make the leaves tough and bitter. Grow it in the spring, then again in the fall. Frost can improve the flavor of kale.
