Ronde de Nice is the round French zucchini you see in the markets of Nice—pale green, softly speckled globes with tender, nutty flesh that cooks evenly and looks downright inviting on a plate. Its shape is made for the Provençal tradition of petits farcis: hollow, stuff with herbed meat or breadcrumbs and cheese, and bake until the tops crisp. It also roasts into sweet wedges, grills beautifully in halved “cups,” and takes well to fritters and quick sautés. Pick at about 3–4” for the best texture and thin, edible skin. Compact, productive plants keep the bowls coming. Naturally hydrating and a source of vitamin C and potassium. Pair with olive oil, garlic, tomatoes, basil, goat cheese, or lamb for that honest, sun-lit flavor.

How to Grow

Plant seeds directly in the garden 1-2 weeks after average last frost date. Sow 3-5 seeds per hill, thinning to a final 2-3 plants per hill. Space between hills should be 3-6'. Optimum soil temperature for seed germination is 65-85 degrees. Or, start seed indoors 3-4 weeks before transplanting into the garden. Transplant to the garden 2 to 3 weeks after your average last frost. Squash grow best in a warm site with full sun. Warm soil is essential to good seed germination and emergence. Using transplants can speed production.
