Red Kuri (also called Hokkaido or Uchiki Kuri) is a teardrop Hubbard-type squash with fiery red-orange skin and chestnut-sweet flesh that purées silky for soups and bakes into custardy pies. Small enough (3–5 lb) for weeknight dinners, it still keeps well after curing.
Roast halves, cube for curries, or stuff and bake whole. A source of beta-carotene and fiber, it’s nutrition wrapped in color. Squash brings abundance, color, and real pantry usefulness to the garden.
