Rosemary brings resinous, piney perfume to roasted meats, potatoes, and focaccia—and it’s a handsome evergreen shrub in mild climates. Traditionally used as a memory tonic and antiseptic rinse, it’s still valued for its concentrated essential oils. Start seeds early and patiently; rosemary is slow to germinate and grow.
Once established, give it full sun, sharp drainage, and a light hand with water. Prune lightly after bloom to keep plants compact and take cuttings for easier future starts. In colder zones, pot it and winter indoors by a bright window. A little goes a long way in the kitchen—and in the garden, too. Average 19,000 seeds/oz.
