Copenhagen Market is a 1909 Danish heirloom that makes compact, round heads with sweet, crunchy leaves—perfect for slaws, kraut, and roasting wedges. Early and uniform, it fits small gardens. Start indoors, transplant with space, and keep moisture steady for tight heads. Cabbage brings vitamin C and gut‑friendly fiber. Start seed indoors 4-6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 50-85 degrees.
