Large Leaf sorrel (Rumex acetosa) pushes out tangy, lemony leaves from early spring, adding bite to salads, soups, and sauces (think classic French sorrel soup). A source of vitamin C and oxalic acid, it should be eaten in moderation but shines as a bright accent green.

A hardy perennial, it appreciates rich soil and regular cutting to keep leaves tender. Flowering can make foliage tough; trim off stalks to prolong harvest. Sorrel is a smart perennial for cooks who like a citrus note without squeezing a lemon—fast, reliable, and one of the first greens back after winter.

Plant seeds directly in the garden 1-2 weeks before average last frost date. Optimum soil temperature for seed germination is 65-85°. Or, start seed indoors 4-6 weeks before transplanting into the garden. Transplant to the garden 1 week after your average last frost date. Harvest as baby greens or full size leaves. Can be used as salad greens, cooked in soups and mixed with swiss chard and spinach. Sow again in mid-late summer for a fall harvest. Or, plant in late fall for an early spring crop. Harvesting outer leaves encourages new growth on the plant. Great for container and in-ground gardening.
