Ping Tung Long from Taiwan yields slender, lavender‑purple fruits 12–18" long with silky, seed‑light flesh that never turns bitter. Plants are heat loving yet surprisingly tolerant of humidity and keep pumping if you keep harvesting. Grill planks, stir‑fry coins, or roast whole for baba ghanoush. Eggplant skins hold nasunin, a potent antioxidant. Start warm, transplant to rich soil, and keep moisture even. A prolific, space‑efficient eggplant with flavor to match its good looks.

Start seed indoors 6-8 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 70-90 degrees. Transplant to the garden 2 to 3 weeks after your average last frost. Eggplants love it hot. They tend to grow best when daytime temperatures are 80-85 degrees. When plants are about 6" high, nip back the growing tip to encourage branching. Eggplants benefit from full sun, cold weather protection, black plastic mulch and possibly row covers.
