Ruby Red Swiss chard—often called ‘Rhubarb’ chard—throws vivid crimson stems under deep, glossy green leaves, bringing flower-bed color with kitchen-garden purpose. The flavor is earthy-sweet and clean: slice the stems for a juicy, celery-like sauté, and wilt the leaves like spinach for frittatas, soups, pasta, and grain bowls. Harvest baby leaves for salads or let bunches size up; it’s a true cut-and-come-again crop that supplies armfuls for months in beds or roomy containers. Naturally rich in vitamins A and K (with vitamin C, iron, and magnesium in the mix), it’s as nourishing as it is striking. Pair with lemon, garlic, and olive oil—or fold into feta, pancetta, or white beans. A bold splash of red that feeds beautifully.
Plant seeds directly into the garden starting 2-3 weeks before average last frost date when soil temperature is at least 50°f. Successive plantings can be made throughout the summer. You can also start seeds indoors 4-6 weeks before transplanting. Optimum soil temperature for seed germination is 65-85 degrees. A spring planting can last all season long if well cared for. Chard can be planted again in late summer about 6-8 weeks before average first frost date.
