American Flag Leek is a time-tested heirloom known for its stout, blue-green leaves and thick white shanks that hold firm through frost and snow. Bred in the 1800s for cold hardiness, this dependable overwintering variety thrives in the Northeast and handles deep freezes with grace. Its mild, sweet onion flavor shines in winter soups, roasts, and broths, but it’s just as tasty sliced raw into fall salads. Harvest late into the season or overwinter with mulch for early spring eating. A staple in homestead gardens for generations, American Flag brings both flavor and fortitude to the table.

Start seed indoors 8–10 weeks before transplanting into the garden. Leeks grow slowly from seed and are usually started as transplants. Optimum soil temperature for germination is about 70°F. Transplant to the garden 2–4 weeks before your average last frost date. Set seedlings deeply & hill soil around the stems through the growing season to blanch the shanks. Harvest when stems are well sized, trimming roots & outer leaves after pulling. In many areas, leeks can remain in the garden through light frosts and even into winter with mulch protection.
