Tall Utah grows sturdy, crunchy stalks with bold celery flavor—ideal for fresh eating, soups, and canning. Developed in the 1950s, it’s still the go‑to garden celery. High in potassium and antioxidants, celery is more than a salad filler. Start seeds early (they’re slow), transplant deeply, and keep moisture consistent; blanching by hilling or using collars will mellow flavor. Harvest outer stalks first to keep the heart growing.

For spring planting, start seed indoors 8–10 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 50–85°F, with best germination near 75°F. Harden off seedlings before transplanting, and set plants in the garden 1–2 weeks before your average last frost date. Celery requires rich soil, steady nutrients, and consistent moisture for best stalk development. For a fall harvest, time transplanting so plants mature in cool weather near your average first frost date. Mulch can help conserve moisture and keep growth even through the season.
