Paris Market carrots—tiny, round roots from 19th-century France—were bred for shallow, stony soils where long carrots sulk. Bite-size and quick, they’re well suited to roasting whole, glazing, or tucking into lunchboxes.
Despite their size they pack beta-carotene and sweetness. Great for containers, too: a deep pot of friable soil yields handfuls in just 50–60 days. Carrots bring beta-carotene, fiber, color, and crisp sweetness to everyday meals.
