Anise (Pimpinella anisum) produces feathery foliage and umbels of white bloom that set the licorice‑sweet seeds used in biscotti, sausage, and herbal liqueurs. Traditionally taken as a digestive and cough soother, anise also draws hoverflies and other beneficial insects to the garden. It prefers full sun and well‑drained soil, maturing in about 100 days. Start indoors in biodegradable pots or direct sow after frost; the taproot dislikes transplant shock. Harvest seed heads as they turn gray‑brown and dry upside down in paper bags. If you love baking or homemade teas, anise is worth the row space.

Or, plant seeds directly into the garden after your average last frost date. Anise needs about 120 days to reach full maturity, so plant early enough in the season. Seeds can be harvested once the plant reaches maturity and the seeds turn gray. The fresh leaves can be used for flavoring and garnishing.
