German chamomile (Matricaria recutita) is the classic tea chamomile—airy plants topped with dainty white daisies and sunny centers that smell of apples. Traditionally brewed to calm nerves and settle digestion, it’s also a gentle skin soother in rinses and salves. Plants prefer full sun and well‑drained soil, self‑sowing lightly if flowers are allowed to mature. Harvest blooms just as petals start to bend back for the best flavor and dry them in shade. Compact and forgiving, German chamomile threads easily between vegetables or herbs, drawing pollinators while giving you a cupboard staple for winter mugs.

Start seed indoors 4–6 weeks before transplanting into the garden. Press seeds gently into the soil surface and do not cover, as they require light to germinate. For indoor sowing, optimum germination occurs with alternating temperatures of 68–86°F. Transplant outdoors after your average last frost date while seedlings are small. Or, direct sow in early spring as soon as soil can be worked, thinning to groups of 2–3 plants every 8”. Chamomile self-sows readily. Harvest flowers when blooms are freshly open, and dry on a screen in a cool, dark, ventilated area.
