Roman chamomile (Chamaemelum nobile) grows as a low, spreading perennial with apple‑scented daisies that make a mellow, slightly bitter tea. Unlike German chamomile, it forms a short groundcover—great between pavers or as a soft edging herb. Long used to calm upset stomachs and skin, it’s also a gentle lawn substitute where traffic is light. Give it sun, decent drainage, and a trim after bloom to keep it tidy. Harvest flowers for drying or fresh infusions; the plants will bounce back quickly. A small patch pays dividends in fragrance, pollinator traffic, and herbal teas all season.

Start seed indoors 4-6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 65-85 degrees. Transplant to the garden after your average last frost date. Or, plant seeds directly in the garden 1-2 weeks after average last frost date. Sow thickly, thinning to a group of 2-3 plants every 8".
Chamomile self-sows readily. Harvest flowers when petals are expanding. Dry on a screen in a cool, dark & ventilated area. Or, hang upside down for drying.
