Hyssop (Hyssopus officinalis) is a woody perennial with indigo flower spikes that bees mob in midsummer. Traditionally used as an expectorant and in liqueurs like Chartreuse, it brings resinous, mint-meets-anise notes to herb blends.

Leaves are potent, so use sparingly in the kitchen. Dry sprigs for winter teas or wreaths, and enjoy the pollinator show while it’s in bloom.
