Santo is the go-to slow-bolting cilantro for steady, leafy harvests with bright, citrus-herb flavor. Bred for leaf production, it holds longer before flowering, so you get fuller bunches for salsa nights, tacos, chutneys, pho, and curries. Stems are tender enough to chop with the leaves, and the lacy white blooms—when they finally arrive—pull in beneficial insects and give you edible flowers. Dry the seed for coriander with warm, lemon-spice notes for pickling and baking, a tidy way to stretch one planting into two pantry staples. Plants thrive in raised beds or roomy containers with steady moisture. Naturally rich in vitamin K, with coriander long used as a gentle digestive spice—useful, flavorful, and easy to keep in rotation. Average 2,200 seeds/oz. Plant seeds directly into the garden in the spring after the danger of frost has passed. Optimum soil temperature for seed germination is 60-80°f. Or, start seed indoors 3-4 weeks before transplanting into the garden. Transplant to the garden 1-2 weeks after your average last frost date. Transplant carefully as cilantro is sensitive to transplant shock. For a continual harvest of leaves, make additional plantings every 3 weeks except during the hottest part of the summer. Cilantro tends to flower and go to seed quickly, especially when soil temperature is above 75 °f. Mulch to keep the soil cool.
