Connecticut Field is the classic American field pumpkin, traced in New England records to the 1700s and still prized for its look: deep orange skin, strong ribs, stout handles, and handsome, medium-large fruits in the 15–25 lb range. Most growers choose it for fall displays and porch steps rather than the kitchen—its flesh is mild and on the watery side. It’s edible for roasting or puree if you cook it down, and the seeds toast up beautifully for snacking. For rich pie flavor and dense texture, steer toward Small Sugar Pie, Dickinson, or Long Island Cheese. Start seed indoors 3-4 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 65-85 degrees. Transplant to the garden 2 to 3 weeks after your average last frost. Or, plant seeds directly in the garden 1-2 weeks after average last frost date. Sow 3-5 seeds per hill, thinning to a final 2-3 plants per hill. Pumpkins grow best in a warm site with full sun. Warm soil is essential to good seed germination and emergence. Using transplants can speed production.
