Forest Green parsley forms dense, frilly leaves that hold their curl and bright flavor longer than flat types. In the kitchen it pulls its weight in both American and Italian cooking: parsley pesto; finishing pasta and risotto; tucked into meatballs and marinara; stirred into chicken soup; and folded into herb butter, potato salad, deviled eggs, and holiday stuffing. A source of vitamins A, C, and K, parsley has long been used as a digestive aid and breath freshener.

Compact plants regrow quickly after cutting and suit containers or tight beds. Start early or direct sow once soil warms, keep moisture steady for even germination, and snip often to push new growth. Let a few umbels bloom to feed beneficial insects.

Start seed indoors 6-8 weeks before transplanting into the garden. Seeds can be soaked in water overnight, then planted in containers. Optimum soil temperature for seed germination is 55-70 degrees. Transplant to the garden 1-2 weeks before your average last frost date. Or, plant seeds directly into the garden as soon as soil can be worked. Cuttings can be made throughout summer and into fall.
