Garden thyme (Thymus vulgaris) forms a low, woody mat of tiny leaves loaded with savory, pine‑citrus flavor—the backbone of bouquet garni, roasted vegetables, and marinades. Rich in thymol, it’s long been used as an antiseptic and cough soother. Plants crave sharp drainage and full sun; think rock wall cracks and herb spirals, not soggy beds. Shear lightly after bloom to keep cushions tight, and harvest sprigs anytime, though oils peak just before flowering. Dry bunches for winter stews or infuse in honey for a soothing spoonful. A small patch pays culinary dividends for years.

How to Grow

Start seed indoors 6-8 weeks before transplanting into the garden. Cover soil very lightly as seeds require light to germinate. Optimum soil temperature for seed germination is 65-75 degrees. Transplant to the garden 1-2 weeks after your average last frost date. Or, plant seeds directly in the garden 1-2 before average last frost date.
Thyme grows best in well-drained soil. Divide plant after 3-4 years.
