Garlic chives (Allium tuberosum), also known as Chinese leeks, form flat, strap-like leaves with a mellow garlic flavor—perfect for dumplings, eggs, and compound butters. Late summer brings starry white umbels that feed pollinators and reseed freely if you don’t deadhead. Rich in vitamins A and C, garlic chives are perennial and cold hardy, returning early each spring. Plant in sun and reasonably fertile soil; divide clumps every few years to keep them vigorous. Snip leaves often for the kitchen and you’ll never miss the store-bought bunches. A small patch gives you fresh, garlicky greens nearly all season.

How to Grow

Plant seeds directly into the garden around average last frost date. Optimum soil temperature for seed germination is 60-65°f. Or, start seed indoors 4-6 weeks before transplanting into the garden.
