New Zealand Spinach (Tetragonia) isn’t a true spinach but fills the gap when heat shuts real spinach down. Succulent, triangular leaves stay tender through summer, with a mild, spinach‑like flavor. Native to coastal Australasia, it loves warmth and regular cutting—clip tips and it branches. High in vitamin C; sailors once used it to ward off scurvy. Soak seed overnight for better germination, provide moisture, and harvest continuously. A smart workaround for summer greens.

Plant seeds directly into the garden after the average last frost date. Optimum soil temperature for seed germination is 50-65 degrees. Sow thickly, then thin to 1 plant every 12". New zealand spinach thrives in summer heat and will produce all summer long, unlike true spinach. Harvest tender leaves and shoot tips about 3-4” long. This will encourage the plant to branch.
