Catskill Brussels Sprouts, released in 1941, make stout plants with large, tightly packed sprouts—great for roasting halves or shaving into salads. Flavor sweetens after frost. High in vitamin K and glucosinolates, sprouts bring serious nutrition. Start indoors early, transplant in spring, and top plants late to size up the bottom sprouts. A classic heirloom that still beats many hybrids for taste.

Brussels sprouts are usually grown as transplants. For a fall harvest, start seed indoors about 4–6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 70–80°F. Set transplants in the garden 2–4 weeks before your average last frost date. Brussels sprouts grow best in cool weather and fertile, well-drained soil. Harvest sprouts when they are firm and about 1–2” in diameter, starting from the bottom of the stalk upward, as the lowest sprouts mature first.
