Pak Choi ‘White Stem’ (bok choy) packs crisp, juicy white stems and spoon-shaped leaves with a clean, mild brassica sweetness. A fast, cool-season green (about 40–50 days), it fits spring and fall successions and stays tidy in tight beds; baby heads are excellent. Halve and char on a hot grill, toss into stir-fries and noodle soups, or quick-pickle the stems for crunch. High in vitamin C, vitamin K, and calcium. Let a few plants bloom—the small yellow flowers are edible and draw pollinators. “Pak choi” literally means “white vegetable” in Cantonese, a nod to its juicy stems and long kitchen pedigree.

Start seed indoors 2–4 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 45–75°F. Transplant to the garden after danger of frost has passed, while seedlings are still young and unstressed. If direct seeding, sow in early spring or late summer so plants mature in cool weather. Pak choi thrives in cool conditions and may bolt if exposed to cold stress followed by warm temperatures. It is grown for its crisp stems and tender leaves, which have a mild mustard-like flavor. Keep plants evenly watered for best texture and steady growth.
