The first fresh bite of spring. Spring raab (rapini) brings tender shoots, leafy tops, and tight buds with a lively, mustard-nutty snap—an Italian cool-season green that’s ready fast in 40–50 days. Sow in early spring or late summer; cool nights and a light frost only deepen the sweetness. Harvest when buds are tight (a few flowers are fine), then keep cutting for a steady, cut-and-come-again supply. Sauté briefly with garlic and olive oil, finish with lemon or chili flakes, or toss with pasta and sausage. Nutrient-dense and satisfying, it packs calcium, vitamins A/C/K, and glucosinolates—perfect when you want real greens before the rest of the garden wakes up.

Direct sow in early spring as soon as the soil can be worked, or start indoors 2–4 weeks before transplanting. Optimum soil temperature for seed germination is 45–75°F. Set transplants in the garden 2–4 weeks before your average last spring frost. Spring raab grows best in cool weather and fertile, well-drained soil with even moisture. Harvest young leaves, stems, and buds before flowers open for best tenderness and flavor. Sow again from mid- to late summer for a fall harvest.
