Late Flat Dutch is a 19th‑century keeper—massive, flattened heads that can top 10 pounds, bred for storage and kraut. Leaves are crisp and sweet after a frost, perfect for fermenting, slaws, and long simmering. Cabbage is loaded with vitamin C and gut‑friendly fiber. Start indoors early, transplant with plenty of space, and keep water steady for tight heads. Harvest when firm, cure briefly, then celler. One head will feed a family—or a crock—through winter.

Start seed indoors 4-6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 50-85 degrees. Transplant to the garden 2 to 4 weeks before your average last frost. If direct seeding, sow seeds 3 to 5 weeks prior to average last frost or as soon as the soil can be worked. For fall harvest, plant transplants 7-9 weeks before average first frost date.
