Red Russian kale brings oak‑leafed, blue‑green foliage veined in purple that turns sweeter after frost. Tender enough for salads when young, robust enough for sautés later. Introduced to North America by Russian traders in the 1800s, it naturalizes easily and overwinters in many climates. Loaded with vitamins A, C, and K. Direct sow early and again in late summer, harvest outer leaves, and let the plant keep pumping. When winter greens are scarce, Red Russian carries on.

Plant seeds directly into the garden starting 4-6 weeks before average last frost date continuing until about that date. You can also start seeds indoors 5-7 weeks before transplanting. Optimum soil temperature for seed germination is 45-80 degrees. Kale is a cool season crop so avoid letting it mature in hot weather. High temperatures slow plant growth and make the leaves tough and bitter. Grow it in the spring, then again in the fall. Frost can improve the flavor.
