Brightest Brilliant Rainbow Quinoa turns beds into confetti—plumes of magenta, gold, orange, and cream on 5–6 foot plants. Seeds cook like tiny grains with nutty flavor, and young leaves are edible greens. Native to the Andes, quinoa likes cool nights and dry finishing weather. Sow after frost, thin for airflow, and let heads dry before threshing. Rinse to remove saponins. Grow it for color, seed, or both—beauty with a pantry bonus.

Plant seeds directly into the garden starting 1-2 weeks after average last frost date. Or, start seeds indoors 2-3 weeks before your anticipated planting date. Set transplants in the garden after danger of frost has passed. In warmer climates, sow in the winter for maturity prior to summer’s heat. Harvest quinoa 90 to 120 days after planting when leaves have dropped, and seedheads remain. Collect before autumn rains and seed drop. Easily remove seeds by hand or shake them into a bucket. Seeds can be cooked, roasted, or
ground into flour.
