Windsor Fava (Broad Bean) dates back centuries—large pods with 3–5 buttery beans used fresh, dried, or mashed into dips like ful. Plants handle cool spring weather and enrich soil with nitrogen. Sow as soon as ground can be worked; stake if winds whip. Blanch and peel mature beans for the sweetest flavor. High in protein and fiber, favas are a spring staple around the Mediterranean.

Plant seeds directly in the garden starting 3-5 weeks before average last frost date or as soon as the soil can be worked. Favas can be planted usually at the same time as peas. In climates where winters remain above 10°f, can also be planted late-summer to early-fall. Pinching back the upper part of the plant as the initial pods emerge typically results in beans of higher quality that are more consistently uniform. For dried beans, harvest a few weeks after normal picking
time when the pods are thick, well-filled and dry. Can also be used for cover cropping.
