Batavian Full Heart escarole forms broad, blanched centers wrapped in darker, gently bitter outer leaves—exactly what you want for soups, stews, and Italian bean dishes. A cool‑weather crop, it heads best in fall or early spring and tolerates light frosts. Bitter greens like escarole have long been valued for aiding digestion and balancing rich foods. Tie outer leaves near maturity if you like a paler heart. If salad needs more backbone than lettuce can give, Batavian steps up.
