Lemon balm (Melissa officinalis) bursts with bright, citrusy scent—perfect for calming teas, summer lemonades, and herb butters. A member of the mint family, it’s hardy, spreading, and happiest in part sun to full sun with average soil. Traditionally used to ease stress and settle digestion, it’s still a go‑to for evening brews and homemade salves. Cut plants back midseason to refresh tender growth and curb wandering roots. Dry leaves quickly in shade to hold aroma. If you want a forgiving perennial that perfumes the garden and pantry, lemon balm is it.
