Peppergrass cress (Lepidium sativum) germinates almost overnight, packing a peppery punch into tiny leaves perfect for sandwiches, salads, and microgreen trays. Historically used as a spring tonic for its vitamin C, it’s still a fast way to get fresh greens when the garden is just waking. Sow thickly in rows or flats and harvest in weeks; successive sowings keep flavor coming. Let a few plants bolt and the seedpods add heat to pickles. Easy, quick, and spicy, peppergrass is a great “gap” crop between slower vegetables and a fine introduction to seed starting for kids.

Plant seeds directly into the garden in early spring through early fall. Or, grow seed indoors year round. Keep soil moist as seed can germinate slowly. Great for containers, in the garden or indoor plantings. Harvest at 4-6 inches for the best taste. For sprouts, harvest before the first genuine leaf.
