Red Garnet Amaranth offers two crops: tender, burgundy baby leaves for salads and giant seed plumes for nutrient‑dense grain. Leaves are high in vitamins A and C; seeds cook like quinoa. Plants thrive in heat and poor soil. Direct sow after frost, thin for greens, and let a few mature for seed—dry, thresh, and rinse to remove saponins. Ornamental, edible, resilient—hard to beat that combo.

Plant seeds directly into the garden starting 1-2 weeks after average last frost date. Optimum soil temperature for seed germination is 65-75 degrees. Or, start seeds indoors 3-4 weeks before your anticipated planting date. Set transplants in the garden 1 to 2 weeks after danger of frost has passed. S
eedlings can be sensitive to transplant shock. Do not disturb roots when transplanting, and water thoroughly.
The leaves, young flowers, and seeds of red garnet are all edible, making it versatile for use as a cooked/raw green, a beautiful ornamental or a grain crop.
