Blue Hubbard is the grand old winter squash—slate-blue, bumpy beasts that can hit 15–30 pounds with dry, sweet, richly orange flesh inside. Introduced to New England in the 1850s, it became a cellar staple because it stores for months and makes superb soups, pies, and roasted wedges. The thick rind also shrugs off pests in the field. Give vines room, sun, and steady water; cure fruits in warmth, then stash them cool and dry. When you want flavor depth and pantry longevity in one squash, Blue Hubbard delivers.
