Cumin (Cuminum cyminum) is the warm, earthy spice at the heart of curries, chili powder, and Middle Eastern stews. The annual plants produce feathery foliage and umbels of tiny white flowers, followed by aromatic seeds you harvest when heads turn brown. High in iron and used traditionally to aid digestion, cumin is best grown where summers are long and dry. Start indoors for a jump, then transplant carefully—roots resent disturbance. Harvest and dry seed heads in paper bags to catch shattering seeds. If you love cooking from scratch, growing your own cumin closes the loop from soil to skillet.

Plant seeds directly in the garden in the early spring after danger of frost has passed. Or, start seed indoors 4-6 weeks before transplanting into the garden.
