Hyssop (Hyssopus officinalis) is a woody perennial with indigo flower spikes that bees mob in midsummer. Traditionally used as an expectorant and in liqueurs like Chartreuse, it brings resinous, mint‑meets-anise notes to herb blends. Give it sun and excellent drainage—think rocky slope—and it will form a tidy hedge you can shear after bloom. Leaves are potent, so use sparingly in the kitchen. Dry sprigs for winter teas or wreaths, and enjoy the pollinator show while it’s in bloom. Hyssop earns its keep as both a medicinal stalwart and a nectar bar in lean soil.
