Big Jim earned its name in New Mexico in the 1970s—pods stretch 8–10 inches yet carry a friendly, medium heat perfect for roasting, stuffing, or drying into chile flakes. The flavor is earthy-sweet with just enough bite to wake a stew. Plants are sturdy, high yielding, and keep setting if you pick often. Capsaicin brings warmth and mild pain‑relief properties; vitamin C rides along too. Start indoors early, transplant after soil warms, and give stakes if branches load up. Roast and peel for classic green chile, or let fruits ripen red for a deeper, sweeter heat.

Start seed indoors 6-8 weeks before last frost. A heat mat helps to speed up the germination process. Optimum soil temperature for seed germination is 65-85 degrees. Peppers generally have long growing seasons and grow slowly during cool temperatures. Delay transplanting until your soil has thoroughly warmed up in the spring. A week before transplanting time, harden off plants by exposing them to an increasing number of hours outdoors each day. Peppers are less cold tolerant than tomatoes.
