Florence Fennel is an Italian heirloom grown for its crisp, bulb-like stem base and its signature mild, sweet anise flavor. The overlapping, pale green stalks form a rounded “bulb” just above the soil line—perfect sliced raw in salads, roasted with vegetables, or braised into savory dishes. Above, the feathery, dill-like foliage grows up to 3 feet tall, adding ornamental texture to garden beds and attracting pollinators. The leaves are also edible and make an aromatic garnish or tea. While technically a tender perennial, fennel is typically grown as an annual. Thrives in rich, well-drained soil with regular moisture and plenty of sun. A striking and flavorful plant that’s as useful as it is beautiful.
Start seed indoors 4-6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 60-70 degrees. Transplant to the garden in mid-spring to late summer. Prefers well drained soil and a steady supply of water. Or, direct seed outdoors mid-spring through early summer. Tender perennial grown as an annual. Harvest dill-like leaves as a garnish and flavoring for soups, salads, and fish. Bulbous roots can be roasted, grilled or served raw. Stalks may be used as a celery substitute.
