Frisée endive frills itself into a fountain of finely cut, pale-green leaves with a pleasant bite—classic in French salads with poached eggs and lardons. Cooler weather keeps it crisp and less bitter; summer heat can push it to bolt. Endive is rich in inulin, a prebiotic fiber long used to support digestion. Blanch the heart by tying outer leaves, or harvest young for gentler flavor. Grow a quick succession for a steady supply of texture and snap your lettuce can’t match.

How to Grow

For spring planting, plant seeds directly in the garden as soon as the soil can be worked, or start transplants 4-6 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 50-65 degrees. For fall planting, direct sow seeds or place transplants in garden about 8 weeks before average first frost date.
