Yellow Sweet Spanish bulks up into softball‑size bulbs with mild, juicy flesh that caramelizes like a dream. This long‑day heirloom has been a market staple for over a century. Slice raw on burgers, roast wedges alongside roots, or cook low and slow for French onion soup. Onions bring prebiotic fiber and quercetin; this one brings sweetness without the bite. Start indoors early, transplant deep, and water consistently for big bulbs. Cure well and use through fall—these aren’t long keepers, so enjoy them fresh and sweet.

Start seed indoors 6-8 weeks before transplanting into the garden. Optimum soil temperature for seed germination is 65-80 degrees. Transplant to the garden about 2-4 weeks before your average last frost. If seedlings begin to tip over, trim tops to 3".
